Veal Casserole With Sour Cream

INGREDIENTS

6 strips bacon
2 pounds stewing veal
2 large onions, thinly sliced
1/2 pound mushrooms
1 cup white wine
2 cups sour cream
Paprika

Fry 6 strips of bacon until crisp. Drain on paper towels and set aside. Cut 2 pounds stewing veal into 2-inch pieces, then braise in the bacon fat. Add a large onion, thinly sliced, 1/2 pound mushrooms, 1 cup white wine, and 2 cups sour cream. Stir well. Cook slowly until the onions have lost their crispness.

Pour into a buttered casserole, coat top with paprika and the 6 slices of bacon, crumbled. Simmer gently until the meat is done. Place under the broiler to make the top crisp and bubbly.
