Toasted Cheese Fingers

INGREDIENTS

1/4 cup grated Cheddar cheese
1/4 cup Swiss cheese
1 egg yolk, beaten
1/4 teaspoon dry mustard
1 tablespoon grated onion
Tiny pinch of cayenne pepper, or to taste
3 or 4 tablespoons cream
12 very thin slices white bread with crusts removed
Paprika

Preheat broiler.

Grate 1/4 cup Cheddar cheese and 1/4 cup Swiss cheese.

Stir in 1 beaten egg yolk. Season with 1/4 teaspoon dry mustard, 1 tablespoon grated onion, and a tiny pinch of cayenne pepper. Work with 3 or 4 tablespoons cream until soft enough to spread.

Spread mixture on 12 very thin slices white bread with crusts removed. Roll each slice, and press so that the rolls will stay rolled. Place in pre-heated broiler. Brown on top. Turn and brown on under side. Sprinkle with paprika and serve sizzling hot.

NOTE: There is paprika and there is paprika! Taste it gingerly before using. It may be very potent, in which case you will be glad that you did not use it too lavishly.
