Smoked Salmon Rolls

INGREDIENTS

1/2 pound of the best smoked salmon, cut as thin as possible
Freshly ground black pepper
Capers

Cut the slices in half and roll them. They are oily and will stick together, but, just the same, spear them with a toothpick for the sake of your guests' fingertips.

Grate freshly ground black pepper over the salmon rolls, and sprinkle with a few capers. If the rolls must wait, place in the refrigerator, but not for too long, as they dry out quickly.

NOTE: You may use regular black pepper if you wish, but the freshly ground black pepper is preferred for this.
