The Cheese Soup of the Engadin

This is a recipe for 1 serving in an individual soup plate. The recipe may be enlarged for as many as required.

INGREDIENTS

2 slices sour-dough French bread
4 tablespoons shredded Swiss cheese
1 cup milk
1 tablespoon butter
Salt and pepper, to taste
Nutmeg

Place a slice of toasted, stale, sour-dough French bread in the bottom of a deep soup plate and cover with 4 tablespoons shredded Swiss cheese. Top the cheese with a second slice of the sour-dough bread and pour over it enough boiling milk, approximately 1 cup, to almost fill the dish. Cover the soup plate and allow to stand for 3 minutes.

Serve topped with 1 tablespoon brown, melted butter and season with salt, pepper, and nutmeg to taste.
