Mosaic Cocktail Sandwich

INGREDIENTS

3 soft, thin rolls about 4-inches long
1/4 pound soft sweet butter
1/2 cup tiny cubes American or Swiss cheese, sliced 1/4-inch thick
1/2 cup tiny cubes bologna sausage, sliced 1/4-inch thick
1/2 cup tiny cubes sweet pickles, sliced 1/4-inch thick

Cut off the ends of the thin rolls. Scoop out the insides. Butter the hollow shells with the sweet butter, reserving a small amount.

Combine the cheese, bologna sausage, and sweet pickles with remaining butter. Stuff the rolls compactly.

Wrap in a slightly damp cloth and set in refrigerator overnight. When ready to serve, cut slices 1/8 to 1/4-inch thick.
