Iced Pea

INGREDIENTS

2 cups fresh or frozen peas
1/2 sliced onion
Salt and pepper, to taste
1 cup water
4 level teaspoons potato flour
4 cups chicken broth
1/2 cup thick cream
Chopped fresh mint, to taste

Cook peas, onion, salt and pepper in 1 cup water over low heat until mushy. Remove from heat.

Stir in potato flour. Add chicken broth. Return to heat and stir until it comes to a boil. Simmer for 3 minutes and remove from heat again.

Rub through a strainer into a bowl. Pack bowl in a larger bowl filled with cracked ice. Stir occasionally while it chills. When chilled, add thick cream and finely chopped mint, to taste.

NOTE: This wonderful old recipe calls for potato flour, a thickening always used by our grandmothers. I am sentimental about these things and try as best I can to follow the old, original directions. I am sure you will be able to achieve the same success with ordinary flour which will give practically the same results.
