Ham Decorated For A Buffet Table

INGREDIENTS

2 envelopes gelatin
1/2 cup cold water
1 quart mayonnaise
1 tenderized ham, roasted in a 350 degree oven for 1-1/2 hours, then skinned and cooled
Ripe olives
Raw carrot slices
Watercress sprigs

Preheat oven to 350 degrees.

Soak 2 envelopes gelatin in 1/2 cup cold water. Let stand 5 minutes, then dissolve over hot water. Cool a little, then blend with 1 quart mayonnaise.

As soon as mayonnaise is blended with gelatin, use it to cover 1 tenderized ham that has been roasted as directed above. Work quickly before it solidifies. While the mayonnaise is still "soft", decorate the ham with "Black-Eyed Susan petals" made of slices of large ripe olives. Use tiny rounds of carrots for the hearts of the flowers. Push these gently into the mayonnaise cover, then arrange the sprigs of watercress as stems and leaves.

NOTE: White daisies may be used, with the help of slices of raw turnips. Once the decorations are on, don't leave it too long in the refrigerator as the watercress will become dehydrated and have a limp and tired appearance.
