Fried Shrimp

INGREDIENTS

1 pound fresh shrimp
1 large onion
Whole cloves
1 lemon
Sprigs of parsley
Salt and pepper, to taste
Bread crumbs
2 beaten eggs
Oil for frying
1 large tomato
Tartar Sauce

Boil 1 pound fresh shrimp for about 15 minutes in water with 1 large onion stuck with whole cloves, 1 lemon cut into quarters, several sprigs of parsley, salt and pepper. Drain.

Remove the shells from shrimp and carefully remove black line (vein) from the backs. Dip each shrimp separately in bread crumbs, then in 2 beaten eggs, and again in bread crumbs. Fry until golden brown in deep fat.

Drain on paper towels and serve on a round platter around a large tomato scooped out and filled with tartar sauce.

Makes 4 servings

NOTE: In the winter, when tomatoes are not so good, simply pour the sauce into a small round serving bowl.
