Fresh Pea Soup

INGREDIENTS

4 cups fresh young peas
1 onion, chopped
3 cups chicken broth
1 cup water
Salt and white pepper, to taste
3 tablespoons butter
3 tablespoons flour
2 egg yolks
1 cup light cream
Whipped cream
Paprika

Boil 4 cups fresh young peas and 1 chopped onion in 3 cups chicken broth and 1 cup water with salt and white pepper to taste. Boil until vegetables are soft. Rub through a sieve. Cool the purée slightly.

Melt 3 tablespoons butter. Stir in 3 tablespoons flour. Beat in 2 egg yolks and add 1 cup heavy cream. Stir this into the purée of peas. Gradually heat, being careful not to boil. Pour into hot soup plates, topping each with a tablespoon of whipped cream and a sprinkling of paprika.

Makes 6 servings

NOTE: This soup is equally good cold.
