Scrambled Eggs Edwin

INGREDIENTS 8 eggs
4 tablespoons sour cream
1/4 teaspoon salt
2 ounces butter
Chopped chives, optionalBeat 8 whole eggs with 4 tablespoons sour cream and 1/4 teaspoon salt until well blended and light.
Melt 2 ounces butter in a double boiler. When melted, pour in the eggs and allow them to set for 20 minutes, stirring occasionally. Chopped chives may be added, if desired.
