Economical Country Casserole

INGREDIENTS

3 pounds potatoes
Salt and pepper, to taste
1 small stalk celery
1 green pepper
3 medium onions
1-1/2 pounds ground round steak
1 (1-pound) can solid-pack tomatoes

Preheat oven to 350 degrees.

Butter a casserole. Slice in a layer of potatoes from a total quantity of 3 pounds and season with salt and pepper. Cover the potatoes with 1/3 of a stalk of celery, coarsely chopped, and 1/3 of 1 green pepper, finely sliced, and 1 medium onion thinly sliced.

Cover these vegetables with a layer of ground round steak. Season meat, repeat layers until casserole is almost filled, 3 layers in all.

Pour the contents of a 1-pound can of solid-pack tomatoes over top layer of ground round steak and bake in a 350 degree oven for about 1-1/2 hours.
