Deviled Clams Grandmére

INGREDIENTS 1 large onion
2 inner stalks celery
2 ounces butter
20 clams
Salt and pepper, to taste
1 cup cream
4 well-beaten egg yolks
1/4 cup chives or spring onions
Buttered crumbs
PaprikaPreheat oven to 400 degrees.
Chop 1 large onion and 2 inner stalks of celery. Melt 2 ounces butter in a skillet. Brown the chopped onion and celery in the butter until glazed. Chop 20 clams and add to the onion and simmer. Salt and pepper, to taste.
Stir in 1 cup cream, and when it comes to a boil remove from heat. Stir in 4 well-beaten egg yolks and 1/4 cup minced chives or spring onions.
Fill individual ramekins or baking shells quite full. Cover with buttered crumbs and bake in a 400 degree oven until brown and bubbling hot. Remove and sprinkle with paprika.
