Stuffed Cucumbers

INGREDIENTS 1 cucumber
1 package cream cheese
1 rounded teaspoon mayonnaise
1 tablespoon ketchup
1 tablespoon chopped chives or parsley
Round crackers, butteredPare the cucumber to the approximate diameter of round crackers. Cut off one end and core the cucumber with a flexible knife. Score the outside of the pared cucumber for its entire length with the prongs of a fork.
Mash the cream cheese with the mayonnaise and ketchup. When soft and well blended, add the chives or parsley. Stuff the hollowed cucumber. Wrap and place in refrigerator.
When ready to serve, cut into 1/4-inch slices. Set each slice on buttered round crackers and serve.
