INGREDIENTS 1-1/2 pounds Cheddar cheese
1/4 teaspoon salt
3/4 teaspoon dry mustard
1/4 cup chopped parsley
1/4 cup chopped onion
2 tablespoons soft butter
Dash of Tabasco sauce
Dash of Worcestershire sauce
1/4 cup tomato ketchup
1/3 cup good sherry wineGrate 1-1/2 pound Cheddar cheese. Add salt, dry mustard, chopped parsley, and chopped onion. Chop these as fine as possible.
Work in 2 tablespoons soft butter. Add Tabasco, Worcestershire, ketchup, and sherry wine. Work together until all the lumps are eliminated and the mixture is smooth and creamy. Set in any small serving dish or bowl. An earthenware crock makes a very attractive container for this spread.
