Coconut Strawberry Cream Tarts

INGREDIENTS 1 cup heavy cream
1/4 cup sugar
1 teaspoon vanilla
1 egg white
1 cup freshly grated coconut, preferred
1 cup sweetened, sliced strawberries
6 Strawberry Tartlets
1/2 cup freshly grated coconut, preferred
6 large strawberries, optional
Powdered sugar, optionalBeat 1 cup heavy cream until stiff. Sweeten with 1/4 cup sugar and 1 teaspoon vanilla. Beat 1 egg white until stiff. Combine cream and egg white and fold in 1 cup freshly grated coconut.
Place 1 cup sweetened strawberries in the bottom of 6 baked Strawberry Tartlets. Cover the berries with the cream mixture and sprinkle the remaining 1/2 cup freshly grated coconut evenly on top of each tart. It in a festive mood, decorate each tart with 1 large strawberry dipped in powdered sugar. Serve as soon as assembled. If allowed to stand the tarts become somewhat soggy.
Makes 6 servings
NOTE: Coconut canned in its own milk or freshly grated is by far the best. However, since these particular ingredients may sometimes be difficult to get, just be sure that whatever you use is moist, never stale or dry.
