INGREDIENTS

4 tablespoons oil
1-1/2 pounds lean pork
3 cups water
2 medium onions
2 stalks celery
2-1/2 cups bean sprouts
1-1/2 cups small mushrooms
5 tablespoons soy sauce
2 tablespoons molasses or 2 tablespoons brown sugar
Chinese noodles

Heat 4 tablespoons oil in skillet. It it starts to smoke, turn the heat down. While oil is heating, cut 1-1/2 pounds lean pork into small pieces. Brown pork in oil, but keep the pieces tender - not hard. Cover meat with 3 cups water and simmer for 20 minutes.

Add 2 medium onions, chopped, 2 stalks celery cut into very small pieces, 2-1/2 cups bean sprouts, 1-1/2 cups small mushrooms, 5 tablespoons soy sauce, 2 tablespoons molasses or 2 tablespoons brown sugar. Cook for 15 minutes longer, turning occasionally with a kitchen spoon. Serve very hot in nests of Chinese noodles heated in the oven.
