Chopped Chicken Livers

INGREDIENTS 6 fresh chicken livers
2 tablespoons chicken fat or butter
1 medium-sized onion, coarsely chopped
2 hard-boiled eggs
Salt and pepper, to taste
Butter
Finger-length strips rye toastCarefully remove gall from 6 fresh chicken livers and lightly fry them in 2 tablespoons melted chicken fat or butter. Add 1 medium-size coarsely chopped onion. Cook slowly over moderate heat until onion is golden.
Put mixture through meat grinder with 2 hard-boiled eggs, or hand chop, if preferred. Add salt, pepper, and melted chicken fat or butter to make a smooth paste. Serve in bowl surrounded by strips of lightly buttered rye toast.
NOTE: If a stronger onion flavor is preferred, put raw onion through the grinder with the cooked livers.
