Cheese Sticks

INGREDIENTS

1 cup pastry flour
1/4 teaspoon salt
1/4 pound butter
1/2 cup cold water
1/2 cup grated Parmesan cheese

Sift 1 cup flour. Measure and resift with 1/4 teaspoon of salt.

Cut in 1/4 pound of butter with a pastry blender or two knives, gradually adding 1/2 cup cold water. Work until you have a smooth dough. Place in the refrigerator for several hours to chill.

Preheat oven to 350 degrees.

Sprinkle a lightly floured board with 1/4 cup Parmesan cheese. Place the dough on top and roll out as thin as possible. Sprinkle with the remaining 1/4 cup of Parmesan cheese. Cut into thin strips and bake until light brown in a 350 degree oven.
