Cheese Biscuits

To serve with salad or soups

INGREDIENTS

2 cups sifted flour
1/4 pound grated Swiss cheese
1/4 pound butter
2 eggs
Salt and pepper

Sift 2 cups flour. Measure and resift onto a pastry board, forming a ring, leaving an empty center.

In this center mix 1/4 pound grated Swiss cheese, 1/4 pound butter, 2 whole eggs, salt and pepper, to taste. Work the flour gradually into the other ingredients in order to make a stiff dough. Let stand for several hours.

Preheat oven to 400 degrees.

Roll the dough out to a 1/4-inch thickness. Cut it with cookie forms, placing the biscuits on a buttered cookie sheet. Bake until golden brown in a 400 degree oven.
