Caviar Cream

INGREDIENTS 2 ounces preserved caviar
2 tablespoons fresh cream
2 ounces soft sweet butter
3 tablespoons whipped cream
Toasted rounds of white breadMash 2 ounces of preserved caviar. Little by little add 2 tablespoons fresh cream and 2 ounces of soft sweet butter.
Rub through a fine sieve. Carefully fold in 3 tablespoons whipped cream. Set in refrigerator to chill. When ready to serve, spread on toasted rounds of white bread.
SMOKED SALMON CREAM:
Substitute smoked salmon for the caviar and proceed as above.
