Buttery Chickens

INGREDIENTS

3 small broilers, 1-1/2 to 2 pounds each
Butter or chicken fat
Salt and pepper, to taste
Flour
1/4 pound butter
3 tablespoons chopped chives or green onions

Preheat oven to 500 degrees.

Rub the broilers, left whole, with soft butter or chicken fat and sprinkle generously with salt, pepper, and flour. Stuff each chicken with 1/4 pound butter and 1 tablespoon chopped chives or green onions, divided evenly.

Tie up the legs of each chicken and roast in a 500 degree oven for 15 minutes. Reduce oven temperature to 400 degrees and roast for 30 minutes more.
