INGREDIENTS 2-1/2 cups small bread cubes
4 ounces melted butter
2 cups blueberries, fresh or canned
2 tablespoons lemon juice
1/4 teaspoon salt
1/2 cup brown sugar
Fresh bread crumbs
Rum-flavored Hard Sauce - OR -
1 cup heavy cream
1/4 cup sugar
1 tablespoon vanillaPreheat oven to 350 degrees.
Mix 1 cup small bread cubes with 2 ounces melted butter. Arrange in a layer in the bottom of a deep glass pie plate. Cover with 1 cup blueberries. Sprinkle with 1 tablespoon lemon juice, 1/8 teaspoon salt, and 1/4 cup brown sugar.
Repeat the process for the second layer, using exactly the same ingredients and in exactly the same order. Having completed the second layer, sprinkle evenly with 1/2 cup fresh bread crumbs. Cover the dish and bake in a 350 degree oven for about 1/2 hour. Remove the cover for the last 15 minutes.
Cool slightly but serve warm with rum-flavored Hard Sauce, or with 1 cup heavy cream beaten until stiff, sweetened with 1/4 cup sugar and flavored with 1 tablespoon vanilla.
