Baked Broilers In Cream

INGREDIENTS

3 broilers, split
Salt and pepper
Flour
6 teaspoons butter
1 cup rich cream
Half milk, half cream, if necessary

Split 3 broilers and season them with salt and pepper. Place them on a buttered baking pan. Then sprinkle with flour and put a teaspoon of soft butter on each half. Cover them with 1 cup of rich cream. Let stand in the refrigerator overnight.

Preheat oven to 400 degrees.

Three quarters of an hour before serving, set the baking pan in a 400 degree oven for about 15 minutes, or until well browned.

At the end of 15 minutes reduce the oven temperature to 350 degrees, cover the pan tightly, and continue to cook for another 1/2 hour.

Makes 6 servings

NOTE: The cream will be absorbed by the chicken while baking. If necessary, add a small amount of half milk, half cream during the baking period.
