Apricot Sauce

INGREDIENTS

1 cup heavy cream
1/4 cup sugar
1 tablespoon vanilla
1/2 cup strained apricot jam
Juice of 1/2 lemon

Beat 1 cup heavy cream until stiff. Add 1/4 cup sugar and flavor with 1 tablespoon vanilla.

Stir in 1/2 cup strained apricot jam and the juice of 1/2 lemon. Set in refrigerator until ready to serve. Serve very cold.
