Apple Pancake

INGREDIENTS

5 eggs
3 tablespoons flour
Sugar
Salt
1 cup milk
1 tablespoon melted butter
1 teaspoon vanilla
1/8 pound butter
4 cooking apples

Sugar and cinnamon

Beat 5 eggs with 3 tablespoons flour, pinch sugar, pinch salt, 1 cup milk, and 1 tablespoon melted butter. Beat well until smooth. Strain. Add 1 teaspoon vanilla.

Melt 1/4 pound butter in a skillet. Peel and slice 4 cooking apples into the melted butter. When the apples are half cooked, chop the apples, but not too fine. Sprinkle generously with sugar and cinnamon and continue to cook until done.

Mix the apple mixture with the batter. Melt 2 tablespoons butter in the skillet and return the mixture to the skillet, frying the pancake lightly over medium heat, until light brown. Fold as you would an omelette and slip out onto a hot platter. Sprinkle again with sugar and cinnamon and serve quickly.

Makes 1 to 2 servings

NOTE - This delicious, aromatic pancake will serve one, with a husky appetite, as a luncheon dish, and two as a dessert.
