Anchovy Eggs and Sour Cream

INGREDIENTS

6 hard-boiled eggs
1 cup sour cream
1 teaspoon lemon juice
4 teaspoons anchovy paste, or to taste
Buttered toast
Paprika

Cut 6 hard-boiled eggs in half lengthwise. Remove yolks and mash with 2 tablespoons sour cream, 1 teaspoon lemon juice, and 4 teaspoons anchovy paste.

Fill whites with this mixture. Set eggs on thin, hot, buttered pieces of toast with crusts removed. Cover thickly with the remaining sour cream and sprinkle with paprika.
