Schnitzel Meat

INGREDIENTS 1-1/2 pounds veal steak
2 tablespoons flour
2 carrots, diced
Salt and pepper
2 tablespoons shortening, bacon fat is preferred
16-ounce can tomatoes, Juice Only
1 small onion, finely chopped
FlourCut veal steak into cubes; dredge with flour and season with salt and pepper. Melt the shortening and brown the meat in it. Remove meat from pan; stir in the flour and blend.
Add the juice from the tomatoes and stir well until the mixture thickens. Add the meat, carrots, and onion. Cover pan tightly and simmer for about 45 minutes, or until meat is tender.
NOTE - Tomatoes are not used in this recipe - (save for another use.)
