Old-Fashioned Potato Soup

INGREDIENTS 8 large potatoes, peeled and cubed
1/4 cup milk
1 quart milk
Salt and pepper, to taste
1 tablespoon butter
1/2 cup flour
1 large egg, well beatenBoil the potatoes until soft. Drain off all the water. Add the quart of milk and heat thoroughly; season to taste with salt and pepper.
Work the butter into the flour and then add the egg and 1/4 cup milk; using only enough milk to make mixture thin enough to drop into hot milk. Add to the hot milk mixture. Cover the saucepan and cook for about 10 minutes. Serve at once.
