Baked Manicotti

INGREDIENTS

8-ounces packaged manicotti tubes
1 (15-ounce) container part-skim ricotta cheese, whipped until smooth
1/2 cup plus 2 tablespoons grated Parmesan cheese, divided
1 egg, beaten
1/4 cup sliced green onion
2 teaspoons parsley flakes
1/2 teaspoon salt
1/4 teaspoon ground pepper
1 (26-ounce) jar or can prepared spaghetti sauce

Preheat oven to 350 degrees. Cook manicotti according to package directions; drain.

In a medium-sized bowl, combine ricotta, 1/2 cup Parmesan, egg and green onion; mix well. Stir in parsley, salt and pepper.

Stuff manicotti with cheese mixture. Arrange in a 13 x 9-inch baking dish; pour spaghetti sauce evenly over manicotti and sprinkle with remaining cheese. Cover and bake about 35 minutes or until hot and bubbly.

Makes 6 servings

NOTE - To whip ricotta cheese, place in a blender or food processor; blend or process until smooth.
