Linguine with Peas (Low-Fat)

INGREDIENTS

Vegetable cooking spray
1 cup coarsely chopped onions
1 large garlic clove, minced
2 teaspoons all-purpose flour
2 teaspoons dried basil leaves
1 teaspoon dried oregano leaves
1/2 teaspoon dried thyme leaves
2 (16-ounces each) cans no-salt-added whole tomatoes, drained and coarsley chopped
1 (8-1/2-ounce) can no-salt-added sweet peas, drained
1/2 teaspoon red wine vinegar
1/2 teaspoon salt
6 cups cooked linguine or thin spaghetti (6-ounces uncooked)
1 tablespoon grated Parmesan cheese

Coat a medium-sized saucepan with vegetable spray and place over medium-high heat; heat until hot. Add onions and garlic; cook 5 minutes or until tender, stirring often. Stir in flour and herbs; cook 2 minutes.

Stir in tomatoes and bring to a boil. Reduce heat to low; simmer, uncovered, 10 minutes. Stir in peas; cook 2 minutes longer, stirring often. Stir in vinegar and salt.

To serve, arrange pasta on a platter; spoon tomato sauce on top and sprinkle with cheese.
