Fettuccine and Shiitake Mushrooms In A Cream Sauce

One of my favorite cream pastas, the Madeira and tarragon are a perfect match.

INGREDIENTS

12 ounces fettuccine
2 tablespoons butter
16 ounces fresh Shiitake mushrooms, thinly sliced
6 cloves garlic, chopped
2 teaspoons dried tarragon, crumbled
1 cup heavy whipping cream
3 tablespoons Madeira
Kosher salt
Freshly cracked pepper
Fresh parsley, chopped

Cook pasta according to package directions. Drain well.

In skillet over medium-low heat, add butter to pan and sauté mushrooms and garlic until softened. Add tarragon, cream and Madeira; simmer just to blend.

Add drained pasta to sauce, toss to coat, add salt and pepper to taste and place on individual plates. Sprinkle with fresh parsley and serve.
