Easy Pasta Fagioli (Low-Fat)

INGREDIENTS

1/2 cup fat-free, reduced-calorie Italian dressing
1 (19-ounce) can cannellini or white kidney beans, drained
1 (28-ounce) can whole peeled tomatoes, undrained and chopped
1 (16-ounce) package wagon wheel macaroni, cooked, drained and kept warm
Grated Parmesan cheese, optional
Ground pepper, optional
Chopped parsley, optional

In a large skillet over medium-high heat, bring Italian dressing to a boil. Stir in beans; cook 2 minutes, stirring occasionally.

Stir in tomatoes; cook 20 minutes or until thickened, stirring occasionally.

In a large bowl, toss hot macaroni with dressing mixture. Top with grated Parmesan cheese and freshly ground pepper. Garnish with parsley.
