Fettuccine with Herbed Cheese Sauce

INGREDIENTS

3 tablespoons butter or margarine
1/3 cup sliced green onions
1 garlic clove, minced
1 tablespoon all-purpose flour
1/2 teaspoon salt
1/2 teaspoon dried basil leaves
1/2 teaspoon dried oregano leaves
1/4 teaspoon ground pepper
1-3/4 cups milk
1 cup shredded mozzarella cheese (4-ounces)
1 cup light ricotta cheese (8-ounces)
3 tablespoons chopped parsley
10-ounces fettuccine or spaghetti

In a medium-sized saucepan over medium heat, melt butter. Add onions and garlic; cook 5 minutes or until tender, stirring often. Stir in flour, salt, basil, oregano and pepper; gradually stir in milk. Cook 2 to 3 minutes, or until thick and bubbly, stirring often. Remove from heat; stir in cheeses until melted and thoroughly combined. Stir in parsley; keep warm.

Meanwhile, cook fettuccine according to package directions; drain.

To serve, in a large bowl, toss fettuccine immediately with cheese sauce.
