Cheddar Cheese Pasta Salad

INGREDIENTS

1 garlic clove
6 to 8 sprigs parsley
1 green onion, cut into 1/2-inch pieces
1 large cucumber, peeled, halved lengthwise, seeded and cut into 1/2-inch pieces
1/2 teaspoon salt
1/2 teaspoon ground white pepper
1 (15-ounce) container light ricotta cheese
1 pound uncooked pasta spirals or twists
2 small green or red bell peppers, or a combination, seeded and cut into 1/2-inch pieces
1 cup shredded Cheddar cheese

In a food processor fitted with metal blade, process garlic, parsley, green onion, cucumber, salt and pepper until finely chopped. Add ricotta cheese; process until thoroughly combined. Transfer mixture to a large bowl.

Cook pasta according to package directions; drain. Immediately add hot pasta to bowl with ricotta dressing; stir to coat thoroughly. Add peppers and Cheddar cheese; stir to combine. Serve immediately.
