Spiny Lobster Grilled with Basil Butter

INGREDIENTS

Two - 1 pound live spiny lobsters, OR one 2-1/4 pound, split lengthwise and rinsed under
    cold running water to remove viscera and intestinal vein
20 fresh basil leaves, chopped
8 tablespoons butter
Salt and freshly ground white pepper
2 tablespoons olive oil

In a saucepan, combine the freshly chopped basil leaves with the butter. Over very low heat, melt the butter without letting it reach a simmer. Stir it constantly to keep the butter thick and creamy. Set it aside.

Place the lobster halves shell side down on a rack over hot coals. Sprinkle salt and pepper over the lobster meat and brush it with the olive oil. Grill the lobster halves for 5 minutes, then turn them and grill them meat side down for 5 minutes more. Turn the lobster halves again and brush the meat generously with the basil butter. Continue to baste the meat frequently with the butter until the lobsters are done - about 10 minutes for 2 small ones, 20 minutes for a large one.

Serves 2
