Grilled Chicken with Portobello Mushroom Sauce

INGREDIENTS 2 tablespoons butter
3/4 cup Portobello mushrooms, finely chopped
1/4 cup onions, diced
1/4 teaspoon garlic powder
2 tablespoons flour
2 cups milk
Salt and pepper, to taste
Garlic butter (melted butter and a bit of garlic powder) for brushing chicken
4 boneless, skinless chicken breastsFOR MUSHROOM SAUCE - Melt butter in a saucepan. Add the mushrooms and onions and sauté until just soft.
Mix the garlic powder into the flour, and add the flour mixture to the sauteéd mushrooms and onions. Cook for 3 minutes.
Whisk in the milk and simmer for 20 minutes, stirring frequently. Check seasonings and adjust if necessary.
Brush the chicken on both sides with melted garlic butter and grill. Top with the warm sauce.
Serves 4
This is great served with rice pilaf and grilled fruit.
