Mixed Fruit Skewers

A selection of the following fruit should be used

INGREDIENTS

Quartered peaches, halved apricots, unripe bananas, cut into 1-inch slices, chunks of pineapple, orange segments, apples and pears, cut into wedges and sprinkled with lemon juice to prevent them from darkening, pitted plums or cherries.

A very attractive alternative to the caramel is to brush the skewers frequently with a mixture of 8 tablespoons of melted butter, 1 tablespoon of sugar and 1 teaspoon of cinnamon or powdered ginger or the seeds from a cardamom pod.

Or squeeze lemon or orange juice into the melted butter.

Serve the skewers with a little of the basting sauce poured over them.

1-1/2 pounds mixed fresh fruits
1/4 cup sugar

Thread the fruits alternately onto skewers. Cook them over a medium fire, turning the skewers frequently, for 5 to 10 minutes. Then sprinkle them with the sugar and let it caramelize over the fire.
