INGREDIENTS

3 barely ripe bananas, peeled and cut into quarters
2 oranges, cut into quarters
1 lemon, quartered
1 small pineapple, peeled, quartered, cored and thickly sliced
2 tablespoons rum
2/3 cup superfine sugar
1 loaf stale, firm-textured white bread, cut into 3/4-inch slices, crusts removed
7 tablespoons butter, melted

Macerate the fruits for a few minutes in a mixture of the rum and 2 tablespoons of the sugar. Cut each slice of bread into 8 rectangles. Brush the pieces of bread with the butter and roll them in the remaining sugar.

Thread all the ingredients onto 6 skewers, alternating the bread and the fruits. Cook over coals for about 10 minutes, or until the surfaces are caramelized, turning the skewers occasionally and sprinkling the bread and fruits with the rest of the sugar without letting the granules fall onto the coals. Serve hot.
