Dry Marinade

INGREDIENTS

2 tablespoons Juniper berries
1 teaspoon peppercorns
5 whole allspice
1 tablespoon dried thyme leaves
3 bay leaves, crumbled
1 cup coarse salt

In a large mortar, grind the juniper berries, allspice, peppercorns and thyme to a coarse powder. Then stir in the bay leaves and coarse salt.

Makes about 1-1/2 cups
