Avocado Sauce

INGREDIENTS

2 avocados
1/2 cup strained fresh lime juice
1 tablespoon olive oil
Coarse salt
Freshly ground black pepper

Cut each avocado in half. Remove the pits, scoop out the avocado flesh with a large spoon. Place it in a large bowl and mash it with a fork. Use a wire whisk to incorporate the lime juice and olive oil, beating until the sauce is light. Add salt and pepper to taste.

Makes about 1-1/2 cups
