Fried Ripe Plantains (Platanos Maduros Fritos)

INGREDIENTS

4 ripe plantains, peeled
Vegetable oil, for frying

Slice plantains diagonally about 1/2-inch thick. Fry in oil over medium heat, turning to brown on both sides. Drain on paper towels and serve immediately.

Makes 6 servings

NOTE - Fried plantains may be frozen and reheated in a microwave oven when ready to serve.
