Easy Beef Roll Ups

INGREDIENTS

8 large (10-inch) flour tortillas
1 (6-ounce) container garden vegetable-flavored cream cheese, or other flavors
8 lettuce leaves
1 pound premium deli beef
1 cup carrots, shredded
1 cup Monterey Jack cheese, shredded
Roasted red peppers, optional

Spread cream cheese evenly on 1 side of each tortilla. Top each with a lettuce leaf, deli beef, shredded carrots, shredded cheese, and roasted red peppers, if using.

Roll tortillas up tightly, wrap in plastic wrap and refrigerate at least 30 minutes before serving.

To serve, cut each roll diagonally in thick rounds.

Makes 8 to 12 servings
