Chocolate Pecan Dickel Pie

INGREDIENTS

6-ounces semi-sweet chocolate
3 tablespoons butter
2 eggs
3/4 cup sugar
1/4 cup light corn syrup
1/4 cup George Dickel Tennessee whiskey (or bourbon or other Tennessee whiskey)
1 cup pecans, chopped
9-inch unbaked pie shell
Whipped cream
Chocolate shavings

In a large saucepan, melt the chocolate and butter over low heat, stirring frequently. Remove the pan from the heat and cool.

In a medium bowl, beat the eggs and sugar together with a wire whisk. Add the corn syrup and the whiskey and whisk until smooth. Slowly stir the egg mixture into the chocolate mixture. Stir in the pecans and pour the filling into the pie shell. Cover the edges of the pie shell with aluminum foil to prevent over browning.

Bake the pie in a 350 degree oven for 25 minutes. Remove the foil and bake 20 to 25 minutes more, until an inserted knife blade comes out clean.

Cool the pie on a baking rack and chill within 2 hours. To serve, top the pie slices with whipped cream and sprinkle with shaved chocolate.
