Chicken Burgers

INGREDIENTS 2 teaspoons vegetable or olive oil, plus more for drizzling
4 slices Canadian bacon
2 pounds ground chicken breast
2 teaspoons paprika, or to taste
2 teaspoons Emeril's Original Essence, or to taste
Salt and pepper, to taste
1 shallot, finely chopped
4 slices mozzarella or cheese of choice
4 kaiser rolls or sourdough rolls, split and toasted
Lettuce and tomatoesPreheat your grill, or large nonstick skillet to medium high heat. Add the olive oil and Canandian bacon. Warm bacon and caramelize it at the edges, about 1 to 2 minutes on each side. Remove and cover with foil to keep warm.
Combine chicken, paprika, Emeril's seasoning, shallot, and salt and pepper to taste. Divide meat into 4 equal portions and make 4 large patties, about 3/4 to 1-inch thick. Drizzle patties with oil and place on hot grill or skillet. Cook about 5 minutes on each side, or until chicken is cooked through.
Top the patties with the reserved Canadian bacon and cheese of choice. Cover loosely with foil, turn off heat, and allow cheese to melt, usually about 2 minutes.
Make a dressing of 2/3 cup mayonnaise, 3 rounded tablespoons Dijon mustard, and chopped fresh tarragon leaves.
Place burgers on bottom half of buns, spread mayonnaise mixture on top of bun, and top with lettuce and tomato.
