Baked Apples with Granola Filling

INGREDIENTS

6 large apples

GRANOLA FILLING

1/3 cup granola
1/3 cup raisins, chopped
1/4 cup almonds, chopped
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 teaspoons lemon juice
1/3 cup honey, divided

3 tablespoons butter, melted
3/4 cup apple juice

Rinse and core apples, leaving the blossom end intact. (Take care not to puncture the apples.) Stand them upright in a 9-inch baking dish.

GRANOLA FILLING - In a bowl, combine the granola, raisins, almonds, cinnamon, and nutmeg. Stir in the lemon juice and 3 tablespoons of the honey. Spoon equal portions of the filling into the apples, packing lightly.

Combine the remaining honey, melted butter and apple juice in a small bowl or container and pour it over the apples. Cover the baking dish and bake the apples in a 350 degree oven for 30 minutes. Remove the cover and continue baking the apples for 15 to 30 minutes more, until tender when pierced with a knife. Baste the apples several times during cooking with the juices.
