Tossed Green Salad with Blue Cheese Dressing

INGREDIENTS 1/2 head romaine lettuce
6 tablespoons olive oil
1 tablespoon vinegar
2 tablespoons blue cheese
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 head chicory or raddichioWash, dry, and tear lettuce into small pieces and store in plastic storage bag until ready to use.
In a small mixing bowl, put oil, vinegar, blue cheese, salt, and pepper and mix well. You want to mash the cheese into the dressing.
When ready to serve, add the romaine and chicory to a salad bowl. Pour over the dressing and toss.
