Stuffed Peppers

INGREDIENTS

10 medium green peppers
1 pound ground beef
1/3 cup chopped onion
1/4 cup finely chopped carrot
1/2 teaspoon salt
Dash of black pepper
1 pound can tomatoes and 1/2 cup water OR 1 quart stewed tomatoes
1/2 cup uncooked long grain rice
1 teaspoon Worcestershire sauce

Mix beef, onions, salt, pepper and rice in a large bowl with fingers. Pour in tomatoes, mix and stuff into peppers.

Place (stand upright) in a baking dish large enough to hold the peppers.

Bake uncovered at 350 degrees for 25 to 30 minutes. If peppers begin to brown too quickly, cover with foil.

Serves 5 to 10

NOTES FROM LYNNE - These may be placed in a freezer container and frozen for future quick and easy last minute meals.

I blanch my peppers briefly in hot boiling water and plunge into ice water to stop cooking.
