Old-Fashioned Mashed Potatoes

INGREDIENTS

8 medium potatoes, peeled and cut into eighths, about 3-1/4 pounds
1 medium onion, finely chopped
1/2 to 2/3 cup milk, divided
1/3 cup butter
1 teaspoon grated Parmesan cheese
1 teaspoon salt
1/4 teaspoon sugar
1/8 teaspoon pepper

Cook potatoes and onions in boiling water to cover 15 minutes or until tender. Drain and mash.

Add 1/2 cup milk and remaining ingredients. Add more milk, if needed, for desired consistency.

Makes 8 servings
