Hot Water Sponge Cake

3 eggs
1/4 cup sugar
1/3 cup hot water or hot milk
1 teaspoon vanilla extract
1/2 teaspoon lemon extract
1-1/4 cup cake flour
1-1/2 teaspoons baking powder
1/2 teaspoon saltHeat oven to 350 degrees. Grease and flour a square baking pan, 8 x 8 x 2-inches or 9 x 9 x 2-inches.
Beat eggs in small mixer bowl on high speed 5 minutes; pour into large mixer bowl. Beat in sugar gradually. Beat in water (or milk), vanilla and lemon extract on low speed.
Beat in flour, baking powder and salt on low speed; continue beating just until batter is smooth. Pour into pan/
Bake until top springs back when touched lightly in center, 25 to 30 minutes; cool. Serve with sweetened sliced strawberries, if desired.
