Fried Chicken

INGREDIENTS

2 cups all-purpose flour
1-1/2 teaspoons salt
2 teaspoons dried whole thyme
2 teaspoons paprika
2 eggs, beaten
2/3 cup milk
1/4 cup lemon juice
5 pounds chicken pieces
Vegetable oil

Combine first 4 ingredients in a plastic bag; shake to mix, and set aside. Combine eggs, milk, and lemon juice; stir well.

Skin chicken, if desired. Place 2 or 3 pieces into a bag; shake well. Dip in egg mixture; return to bag, and shake again. Repeat procedure with remaining chicken.

Pour oil to a depth of 3/4-inch into a large, heavy skillet. Fry 4 or 5 pieces of chicken in hot, 350 degree oil, over medium heat 15 minutes or until golden brown, turning to brown both sides. Drain on paper towels. Repeat procedure with remaining chicken.
